Ingredients
- Thick-cut Applewood smoked bacon 6 slices
- Chili powder 3 tsp
- Garlic, finely chopped 4 cloves
- Lime wedges, for garnish
- Ground cumin 1 tsp
- Onions, finely chopped 2 medium
- Sour cream, for garnish
- Chipotle chili powder 1 tsp
- Shredded Cheddar
- Bell pepper, chopped 1 red
- 85 percent lean ground beef 1 pound
- Dried oregano 2 tsp
- Ground pork 1 pound
- Bell pepper, chopped 1 yellow
- Beer (recommended: Budweiser) 1 cup
- Sliced scallions
- Smoked paprika 1 tsp
- Black beans, rinsed and drained One 15-ounce
- Diced tomatoes, One 24-ounce
- Salt and fresh ground black pepper
- Kidney beans, rinsed and drained One 15-ounce
- One 24-ounce can crushed tomatoes
Procedure!
- Over medium-low heat, cook the bacon in a large, heavy-bottomed Dutch oven. Toss the bacon around every few minutes to make sure it doesn’t burn, about 10 minutes.
- Then, when the bacon is browned, add the garlic, onions, and bell peppers, and season with salt and pepper to taste, and mix well.
- To make the dish even spicier, you can also use smokey pepper instead of smokey pepper.
- If you want the vegetables to be soft and the seasonings to have a good smell, you should cook them until they are.
- Break up the beef with a wooden spoon after it is added.
- Before adding pork, the meat should be broken up and start to brown.
- Using a wooden spoon, break the meat up into small pieces like you would with beef. Brown the meat until it is no longer pink, about 4 minutes.
