- 1 green bell pepper, diced and a half yellow onion
- Sliced finely, deveined and seeds removed from 1 jalapeño pepper
- Tomatoes and chilis in a 15-ounce can
- 1/2 a cup of tomatillos in sauce
- 3 minced garlic cloves
- Chipotle chile powder and two tablespoons of flour
- 1 tbsp. cumin seed powder.
- 1 tbsp. of oregano powder
- One-half teaspoon of kosher salt
- 2 grinds black pepper, coarsely
- 2 quarts of whole milk
- As much tomato paste as you like.
- Red wine vinegar, 1 tbsp.
- Grated 2 cups of cheddar cheese
- 1 teaspoon of lime juice
- Citrus flavouring: 1 tbsp
Instructions
Add the onion, bell pepper, and jalapenos to a large dutch oven and simmer for 5-6 minutes, turning periodically, until softened.
Make sure to thoroughly combine the canned tomatoes and chilis with tomatillo salsa as well as the spices and seasonings before serving.
Whisk in the milk, followed by the tomato paste, vinegar, and cheese, all of which should be melted at this point.
Whisk in the lime and lemon juices just before serving.
